Cranberry Orange Granola

My friend Nancy's husband Geza calls this "Nettie Muesli". I always bring a batch with me when i stay overnight with them in Bremen. A friend was asking for the recipe, so here it is:

Preheat oven to 350°F or 160°C

1/2 c sunflower seed oil or corn oil or some other kind of veg. oil
1/2 c maple syrup (can substitute honey or brown sugar)
4 tsp vanilla extract or 4 pkgs vanilla sugar
2 T orange marmalade
2 tsp cinnamon
1-2 tsp salt (optional)
1/2 c sliced almonds
4-6 c rolled oats (course, not fine)
1/2 c dried cranberries (craisins)
zest of one organic orange ('bio', auf deutsch)

Heat all of the ingredients except for the almonds, oats and cranberries in a saucepan. When everything is thoroughly melted together, pour the liquid mixture over the oats, stir and keep adding oats until you have the consistency you want. Stir in the sliced almonds. You can vary the ratio of oil to syrup, depending on how sweet you want it to be. The more oats, probably the more health-giving it will be, and the more oil, generally the tastier it will turn out. If you're not concerned about saturated fats, using half butter and half oil will make it even yummier.

Spread the mixture out about 1/2 in (1.5 cm) thick on a cookie sheet lined with foil or baking parchment. Bake at 350°F or 160°C for about 15 minutes and check to see if it needs to be baked longer.

When cooled, mix in the cranberries.

Serve with yogurt or milk and fresh fruit. I'm baking some right now. Will post a picture when i get a chance.
